KAMPFIRE KOOKIN’

BOY SCOUT CHICKEN CATCHAWHATEVER

(Actually it’s Chicken Cacciatore but who can spell it?)

 

1/2 cup oil

4 skinless/boneless chicken breasts

1 tbsp. garlic powder

1 large onion sliced

2 large peppers cut into strips

1/2 lb. mushrooms (sliced)

2 celery ribs cut in 1/4-inch strips

1 tsp. cracked pepper

2 28-oz. cans crushed tomatoes

2 tbsp. Italian seasoning

1 28-oz. can diced tomatoes

1 cup white vinegar

 

Brown chicken breasts in the oil in the bottom of a #12 Dutch oven. Add remaining ingredients, except vinegar. Simmer covered for 3 hours (stir every 15 minutes). Add the vinegar 30 minutes before serving the food. Serve over cooked rice, cooked linguine pasta, or serve as soup. Great served with garlic bread. Should serve 6 to 8 adults or 3 to 4 hungry Boy Scouts. 

 

RAY’S QUICK AND EASY GARLIC BREAD/TOAST

 

Hot dog buns and/or hamburger buns

Margarine or butter

Garlic powder

 

Split buns into two halves. Butter buns on cut side only and place on cookie sheets butter side up. Sprinkle liberally with garlic powder and place cookie sheets in a low (200 degrees or slightly less) oven. Dry/bake the buns halves until just crisp. Cool and put into Ziploc bags. Will keep indefinitely.
