KAMPFIRE KOOKIN’
APPLE/BLUEBERRY/CHERRY KOFFEE KAKE
2 cups flour
1 cup sugar
1/2 cup margarine or butter (softened)
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. grated lemon peel (substitute lemon juice)
4 tsp. vanilla extract (optional)
2 eggs
1/2 cup milk
1 can (21 oz.) ‘any-flavor’ pie filling
Mix flour, sugar, margarine, baking powder, salt, lemon peel, and vanilla together with a fork to make a crumbly mixture.
Take out 1 1/2 cups of the mixture (reserve the rest) and add eggs and milk; mix well. Spread this mixture out in the bottom of a #12 Dutch oven. Drop pie filling by spoonful onto batter.
Sprinkle the reserved crumbly mixture over the pie filling. Cover and bake at 350 degrees for 30 to 40 minutes (4 to 5 hot briquets under the Dutch oven and 15 to 18 hot briquets on top), until golden brown. Cool, cut into pieces, and serve. Should serve 8 to 10 adults or 4 hungry Boy Scouts.
