‘WHISTLE PIG’ SANDWICH SPREAD

 

Refer to the recipe for ‘Fried Groundhog’ in THE WAYNEDALE NEWS – February 6, 2002 edition – (page S3). Instead of rolling cooked meat in flour and frying, continue boiling groundhog pieces until the meat falls off the bones. Separate bones from the meat and discard the bones. Grind the meat pieces in a food processor or meat grinder. Substitute the groundhog meat for the meat in your favorite ham salad sandwich spread recipe. Some of the ingredients I use are: boiled eggs, pickles, onions, and relish. I run these through the food grinder after I grind the meat. I then mix in, mustard, vinegar and/or pickle juice, along with mayonnaise and/or salad dressing to a nice spreading consistency. Next I add salt, pepper, sugar, and garlic powder to taste. I sometimes let the mixture set in the refrigerator (covered) until all the flavors have blended. Incidentally I’ll bet you can’t tell the groundhog meat from beef once it’s cooked, ground, and mixed into your favorite sandwich spread recipe.
