3 slices of bacon cut in 1/2 inch pieces
4 cups of ‘sliced’ potatoes (peeled optional)
1/2 cup chopped green bell pepper
1/3 cup chopped onion
1-1/2 cups shredded cheddar cheese
1/8 tsp. seasoned salt
1/8 tsp. pepper
1 tsp. butter or margarine

Heavy duty aluminum foil (two pieces 18 – 24 inches)

Spray one side of an 18 – 24 inch piece of aluminum foil with non-stick cooking spray. Arrange half of the bacon on the foil. Top bacon pieces with potatoes slices, half of the green bell pepper, half of the onion, and half of the cheese. Put on the rest of the potatoes, green pepper, onion, and sprinkle with salt and pepper. Top with the rest of the shredded cheese and bacon. Dot with butter or margarine.
Spray one side of the other piece of aluminum foil with non-stick spray. Place foil sprayed side down on top of the potato/pepper mixture. Seal all edges with a double fold.

Place packet on grill over hot coals (not flames) and cook for about 40 minutes. Turn the packet once or twice making sure the packet isn’t punctured.
