KAMPFIRE KOOKIN’ WILD THANGS

The Christmas season is over; the new year has begun. I trust that you had a great time over the holidays. To celebrate the up coming super bowl party I suggest you have a large amount of sandwich spread or dip made ahead of time. Dig down in your chest freezer and look for two squirrels, one groundhog, or two rabbits that you harvested last year. Here’s what you will need to make the best sandwich spread you ever ate and you can modify it a bit and enjoy a delightfully different kind of dip.

Ray’s World Famous Groundhog (RoadKill) Sandwich Spread

Pick one of these – two squirrels, one groundhog, or two rabbits. Ok, maybe a deer roast if you don’t have any of the others. I prefer groundhog.

Boil the meat in water to cover until the meat falls off the bone. You may need to change the water a few times and use lots of garlic powder in the water.

Grind the meat up and collect it in a large bowl. Add ground up boiled eggs, ground up pickles, some relish if you have it, ground up onion, and some ground up celery. Blend it to desired consistency with mayonnaise. Add salt, pepper, and garlic powder to taste.

Kind and amount of ingredients will vary to what you have on hand and to your own taste. A good idea is to look at your favorite sandwich spread recipe and duplicate the ingredients. Serve it as a sandwich spread, put it on toast points, crackers, or by using a bit more mayonnaise and pickle juice or maybe some sour cream, serve it as a dip. Keep refrigerated and covered until serving time.
