A SIMPLE, I GOTTA HAVE SOMETHING SWEET, BOY SCOUT POTATO CANDY
1 large potato
XXX confectioners’ (powdered) sugar
Your favorite flavoring – orange, vanilla, lemon, chocolate, etc.
Peanut butter (smooth or chunky)
Boil potato until soft. Mash thoroughly until there are no lumps. You want the potato to be smooth and creamy. Add your favorite flavoring and enough powdered sugar to make the potato into pie dough consistency. Pat the potato dough out on a dough board, or a clean flat canoe paddle by hand, until it’s approximately 1/4 inch thick. Spread dough with peanut butter and roll it up like a jellyroll. Chill, slice, and sprinkle cut edges with more powdered sugar. 1 potato serves approximately 1/2 Boy Scout or 2 to 4 potatoes per Scout depending on size of Scout.
