KAMPFIRE KOOKIN’
BOY SCOUT CORNBREAD TACO CASSEROLE
1 lb. Hamburger
1 pkg. Taco seasoning
1 can (12 oz.) corn (undrained)
1/2 cup green bell pepper (chopped)
1 can (8 oz.) tomato sauce
1/2 cup chopped onion (yellow or green)
1 can (12 oz.) Kidney beans, pinto beans, or chili beans (undrained)
Salt & Pepper to taste
1 box (8 1/2 oz.) corn muffin mix
1/3 cup shredded cheddar cheese
Brown hamburger in bottom of Dutch oven; pour off grease. Stir in taco seasoning, undrained corn, chopped pepper, salt, pepper, and tomato sauce. Mix corn muffin mix according to directions on box then, stir in chopped onion. Pour batter over top of hamburger mixture leaving a two-inch hole in the center. Cover and bake at 400 degrees (5-6 hot briquets under the Dutch oven and 15-20 hot briquets on top) for 20 minutes. When done, take off lid and sprinkle shredded cheese over the top of the cornbread, cover and bake for another 3 or 4 minutes to let the cheese melt. Take off cover and serve to 6 adults or 3 Boy Scouts.
