KAMPFIRE KOOKIN’

RAY’S SO SIMPLE EVEN A BOY SCOUT CAN MAKE THEM – DEVILED EGGS 

 

1 dozen eggs

Mayonnaise

1 tbsp. Salt

1 tbsp. Sugar

pinch of salt

Paprika

1 Ziploc bag

 

Put ‘cold’ eggs in a pan and cover with ‘cold’ water. Add a pinch of salt. Set on stove and slowly bring the water to a rolling boil. Let boil for 1 or 2 minutes. Cover pan and set aside for 20 minutes. Eggs will cook and the yolks will not turn dark. Pour off water and fill pan with cold water and cool eggs completely. Take off the shells and cut each egg in half.

Take out the yolks and mash them in a bowl. Add enough mayonnaise a little at a time to just about equal the amount of mashed yolks. Add salt and sugar. Blend yolks, mayonnaise, sugar, and salt with a whisk. Put yolk mixture into a Ziploc bag, cut off a corner and squeeze the yolk mixture into the empty egg halves. You will have yolk mixture left over; do not save it; use it to make a sandwich. Shake a ‘bit’ of Paprika on the yolks for an added bit of color. Chill eggs before serving. Should serve 12 adults or 1 to 2 Boy Scouts.
