KAMPFIRE KOOKIN’

I’ve loved/liked potato soup as far back as I can remember. Yes, I’m a potato soup addict. Every time we go to a restaurant around suppertime, I try their potato soup if they have one available. I come across different recipes for this favorite soup of mine and try them from time to time. I mostly look for ‘simple’ recipes without exotic spices, expensive ingredients, or complicated instructions. Here is one of my favorite ‘easy’, ‘inexpensive’, potato soup recipes that any Boy Scout could make with approximate cost.

 

EASY BOY SCOUT POTATO SOUP

 

1 can sliced/diced potatoes

1 can mushroom soup

1 soup can of milk

1 green onion (sliced)

2 or 3 slices of crisp bacon (crumbled) or 1 tbs. Bacos (imitation bacon)

Optional – 1 or 2 tbs. chopped celery or a dash of celery seed.

Salt and black pepper to taste

 

Empty can of sliced/diced potatoes (water and all) into a 2-quart pan. Cut up potato pieces as small as possible. Mash some of the pieces against the side of the pan with a spoon – this will help thicken the soup. Add the sliced green onion, crumbled bacon, and celery. Heat through. Add milk, stir, and bring soup to a simmer. Do not boil, the milk will scorch and/or curdle. Season to taste with salt and pepper; serve with crackers. Should serve two Boy Scouts. Approximate cost is less than a dollar depending on ingredients on hand, what you find in the markdown, buy with coupons, or if you shop at Save-A-Lot and Aldis.
