KAMPFIRE KOOKIN’

BOY SCOUT SODA BREAD

 

3 cups flour

1 tsp. baking soda

2 tsp. sugar

pinch of salt

1/2 stick of butter or margarine (softened)

1 1/4 cups milk or buttermilk

 

Mix dry ingredients. Add soft butter and mix with fingertips. Add milk and mix well. Knead for 1 minute. Shape into a flattened round loaf and score an ‘X’ in the top. Place on a greased cookie sheet. Bake for 30 minutes at 400 degrees. Reduce heat to 350 degrees and bake for another 30 minutes.

For baking outside – Put dough in an 8-inch cake pan and place on a cake cooling rack or three rocks or bottle caps in the bottom of a pre-heated #12 Dutch oven. Put on lid and put 6 or 8 hot briquets under the Dutch oven and 12 to 15 on top. Bake for 1 hour. Brush top of finished loaf with a little margarine.

Makes one 7-inch loaf. Raisins, nuts, herbs, or cheese can be added to the dough before baking for variety.
