KAMPFIRE KOOKIN’
Taken from a Boy Scout ‘SPAM’ Cookoff held last fall in Putnam County, West Virginia.
Note: the temperature for the wings oil is 275 . . . I’m not sure, that seems a little low. However that was what was on the recipe.
SPAM BUFFALO WINGS
1 1/2 cups Bisquick
Pinch of salt
Pinch of cayenne pepper
1 egg (beaten)
1 tbsp. Water
1 12-oz. can of Spam (cut into 3/4-inch thick logs (‘Wings’) about
2 inches long
32 oz. vegetable oil
1 medium-size bottle of Frank’s Hot Sauce
1 tbsp. Butter
1 bottle Blue Cheese dressing
In a bowl or heavy plastic baggie – mix Bisquick, salt and cayenne. In another bowl, whisk egg and water. Heat oil to 275 degrees. Dredge Spam logs (Wings) in Bisquick, then egg wash, allowing excess to drip away, then dip ‘Wings’ into Bisquick again. Fry a few coated Spam ‘Wings’ at a time until browned and crisp. Drain on paper towels. Allow ‘Wings’ to cool somewhat. Meanwhile, in a saucepan, combine hot sauce and butter; heat until butter melts and place into a bowl. Place dressing in another bowl; use both as dippers for “Wings.”
