KAMPFIRE KOOKIN’
MOCK APPLE PIE
1-1/2 cups water
1-1/2 tsp. Cream of tartar
1-1/2 cups sugar
20 saltine crackers (broken)
1/4 stick margarine
2 uncooked pie crusts
Ground cinnamon
Mix water, sugar, and cream of tartar together and heat just to a boil and cook for 4 minutes. While liquid is cooking, put one piecrust in bottom of an 8-inch pie tin. Break saltine crackers and put in piecrust. Sprinkle ground cinnamon on top of broken saltines. Dot crackers with slices of margarine. Spoon hot liquid over saltines.
Cut second piecrust into strips. Put every other strip of dough across top of saltines. Turn pie 45 degrees and place remaining strips of dough over the first layer of pie dough strips. This will form a latticework pattern. Pinch ends of dough strips to bottom piecrust edges. Bake at 375 degrees for 30 minutes. Cool pie and cut in wedges.
