KAMPFIRE KOOKIN’

When I was growing up, my mom used to fix (‘prepare’ for you Yankees) a dish called Chipped Beef and Gravy, Creamed Dried beef, or maybe it was Dried Beef and Gravy. I’ve heard it called many things. Later on, when I joined the Boy Scouts we called it S.O.S. (Something on a shingle). After a stint in the Navy, it was still called S.O.S. but by that time ‘S’ stood for ‘Something-else’ on a shingle. The shingles remained the same.

 

Creamed Dried Beef

1/4 lb. dried beef 2 tbsp. Butter

1 or 2 tbsp. Flour 1 cup milk

1 platter of toasted bread half-slices (preferably hot and buttered)

pepper to taste

Chop meat into small pieces and brown in skillet with butter. Sprinkle on flour and stir. Slowly add milk and cook until slightly thickened. When it just starts to boil, pour it over a platter of toast and serve at once.

 

Quick S.O.S. Ray’s Way #1

1 jar of dried beef (cut in small pieces 1 can cream of mushroom soup

3/4 can milk (or water) pepper to taste

bread (toasted)

Mix soup with milk, add cut up dried beef, and heat to boiling. Season to taste. Serve with toasted bread slices.

 

Quick S.O.S Ray’s Way #2

1 pkg. Aldi’s chopped ham, beef, or turkey

1 can cream of anything (mushroom, celery, chicken, asparagus) soup

3/4 can milk or water

pepper to taste

Prepare as above.

 

Ray’s Most Very Best Favorite S.O.S.

6oz. Package Southern Mills Peppered Gravy mix

(buy at Wonder Bread thrift store located west of Quimby Village shopping center.)

1 cup cold water

3 cups boiling water

1 lb. Sausage or hamburger (browned and drained)

or 4 pkgs. Aldi’s chopped beef, turkey, or ham (cut in small pieces)

Add garlic powder to taste

Prepare peppered gravy mix per package instructions. Season to taste. Add your choice of meat listed above and heat through. Serve over toast. (Split baked biscuits may be used for shingles). In restaurants I’ve seen this concoction served over biscuits, fried eggs, and potatoes all at the same time. To each his own. Also it is very good served over baked potatoes.

Sorry teachers, I know that ‘Most Very Best Favorite’ is not grammatically correct but that’s the name of the dish and I’m sticking to it.
