KAMPFIRE KOOKIN’
BOY SCOUT SAUSAGE/EGG CASSEROLE
1 lb. bulk sausage
1 cup chopped celery
1 small onion (chopped)
1 small green pepper (chopped)
1 small red pepper (chopped)
8 slices white bread (cubed)
4 eggs (well beaten)
3 cups milk
1 can mushroom soup
3 cups shredded cheddar cheese
Salt & pepper to taste
Cook sausage in skillet until browned. Add celery, onion, and peppers. Cook until tender. Drain off grease. Place half of bread cubes in a buttered Dutch oven. Layer with sausage mixture and then remaining bread cubes. Beat milk and eggs together; pour over ingredients in Dutch oven.
Bake at 350 degrees for 45 minutes. Spoon soup over top and sprinkle with cheese. Bake for 15 minutes more. Should serve 8 Boy Scouts but don’t bet on it. Better make two casseroles instead of doubling up on the recipe.
