KAMPFIRE KOOKIN’
BOY SCOUT HIKING/CANOEING SANDWICH FILLINGS
Corn Beef Filling – 1 (12 oz.) can corned beef, 6 sweet pickles (chopped fine), 1 tsp. prepared mustard, 4 tbsp. mayonnaise.
Bologna Filling – 1/2 lb. Bologna (ground or chopped fine), 3 hard cooked eggs (chopped fine), 4 dill pickles (chopped fine or use relish), 4 tbsp. mayonnaise.
Fish Filling – 2 (7 oz.) cans tuna fish or sardines (drained and chopped fine), 1 cup celery (chopped fine), 8 sweet pickles (chopped fine), 8 tbsp. mayonnaise.
Egg Filling – 12 hard-boiled eggs (ground or chopped fine), 1 tsp. salt, 1 tsp. paprika, 1/2 tsp. dry mustard, 4 tbsp. cider vinegar, 4 tbsp. mayonnaise.
Needed: 20 slices of bread for each recipe.
Each of the above sandwich filling recipes should make enough sandwiches to feed 10 adults or 2 Boy Scouts.

Mix peanut butter with jelly.
Mix peanut butter with marshmallow cream.
Mix peanut butter with honey.
Mix peanut butter, banana, and pancake syrup (or honey).
Amount of ingredients will vary with your taste and the spreadability of the mixture. (Is spreadability a word?)
Sandwiches can be made on the river, on the trail, or at home. The amount and type of ingredients are subject to the Chef’s taste. Keep refrigerated by packing ingredients or sandwiches on top of a couple of Ziploc bags full of ice cubes – use melted ice to replenish water in canteen.
