KAMPFIRE KOOKIN’

These recipes have been around for a long time but people are still asking me for them. They’re simple, quick, and easy; Boy Scouts love them.

MONKEY BREAD

4 tubes biscuits

1/2 cup white sugar

1/2 cup brown sugar

1 tbsp. Cinnamon

1 stick of margarine

1/2 cup nuts (pecans or other)

Open biscuits and cut each one in four pieces. Roll in white sugar and place in an angel food cake pan. Nuts maybe sprinkled on the dough as you build up the layers or just sprinkle on top when the layers of dough are complete. Mix the brown sugar, cinnamon, and nuts together and sprinkle on top of the biscuits. Melt the margarine and pour over all. Place the angle food cake pan in a preheated (350 degree) #12 deep Dutch oven and bake for 20 to 30 minutes (5 or 6 hot charcoal briquets under the Dutch oven and 12 to 15 hot briquets on top. Just tear apart to eat. This may be baked in a regular oven at home.

Boy Scout Breakfast Casserole

1 lb.(roll) pork sausage (browned and drained)

6 eggs beaten

2 cups milk

1 cup shredded cheddar cheese

1 tsp. salt

1 tsp. mustard

2 slices bread (cubed)

Salt & pepper to taste

Mix all ingredients together and pour into a buttered (greased) Dutch oven. Put on the lid, let set for a while to let the bread soak up some of the beaten egg, then bake for 45 minutes at 325 to 350 degrees (4 to 5 hot briquets under the Dutch oven and 12 to 15 hot briquets on top). Remove from heat, uncover, let rest for 5 minutes, and then slice into pie wedges and serve. Good with hot sauce, catsup, taco sauce, or sour cream.
